Sumi Robata Bar is a Japanese Restaurant which started its operation in 2000. It was a restaurant owned by the Sugimoto Family from Japan. It is their first branch in the United States although they already have a chain of restaurants that are popular in their home country especially in Hokkaido and Osaka. Although they already have a background in handling this type of business, it doesn’t mean that they did not encounter any challenges when they decided to go out of their comfort zone and put up a restaurant in a place that is located almost at the other side of the world.
Among the problems they encountered is the source of their ingredients especially their seafood. They wanted everything fresh so importing all the time is out of the question. Also, seafood in the United States is not in season all the time so they really need to have some preserved in order for them to serve sashimi. The downside of this, however, is that preserved seafood doesn’t work for a good sashimi dish. Good thing that they managed to get a supplier that could meet their demands all year round. For other ingredients they need especially the spices, they chose to get it from local suppliers in Tempe. They are specifically handpicked to ensure the quality of the food that would be served here. Their effort paid off because now, Sumi Robata Bar is now one of the most well-known restaurants in the area.
